PAUL TERREBONNE, a Nicholls State University culinary senior from Larose, has been busy practicing for the S.Pellegrino Almost Famous Chef Competition in hopes of taking the national title. Terrebonne won top honors at South Central Regional competition in San Antonio in January, qualifying him for the national competition. It was the fifth consecutive regional title taken by a student at the John Folse Culinary Institute in Thibodaux. Terrebonne’s winning dish included pan roasted red snapper with corn maque choux puree; Jazzmen Rice prepared with Abita Beer; and a confetti of pickled vegetables. He will take his winning recipes to Napa Valley, Calif., March 9-12 to compete against nine additional regional winners from the United States and Canada.
